Is there a simple way to increase the brightness levell of the dash lights?

Yep, did the leds......looks stock but brighter.

I would like brighter lights also. How hard is it to change these?? Do you remove the instrument panel??

It's easy, pull head light knob off, couple a screws, tilt your wheel down, pull cluster slowly, remove 2 plugs/harnesses, leds that don't come on, just pull em and reinsert 180 degrees, just test it before u screw everything back in.........15 min job,
