My thought is not a random pocket at high temp but that when you jump on it you might introducing air into the system via a bad head gasket and then it gets stuck there until it clears. Although when my Lightning did that the temp kept going up up up, it didnt like hit 230 and stay there. Thats whats odd about the whole thing.

what do your IAT2s look like pre pull and post pull? Do those come up and come right back down like they should? If the whipple was throwing off that much heat Id think you'd have major IAT2 issues as well.
