unless the coolant level in the system was below the leak point in the freeze plug I have a hard time imagining how air would get in but I've been wrong before.

If you know you have a leak I'd start by fixing that. The pressure of the system is a big part in the boiling temp of the coolant, if you're losing pressure thats throwing **** all out of whack. I mean when I put my pressure tester on the overflow tank and start ramping up pressure you can see the fluid level in the tank go down and then come back up when you release it.
