I am an E85 supporter. I have not dealt with C16 but my understanding is the power is similar but you will need to flow more fuel so you may have to increase your injector sizes, added cost of course. To give you an idea; 750RWHP via a 3 speed auto maxes my injectors out, they are 80's.

Also, not all stations have equal quality E85, just because it states E85, it is normally in the range of E70-85 with winter blends being E70. Depending on your tune, you may want to test the fuel at your local stations. Typically, I get my E85 from the same place and it is pretty consistent, but from location to location it is not.
QTs E85 have tested closer to e70 and even worse. Kroger E85 has been really good and have even seen it better than E85.

Make sure your fuel filter supports E85; I went with a. stainless steel cleanable type.
