Is any 275 good on a stock rim? Street tires too ?

I know on the 555's Nitto recommends 9" rim width minimum, stock rim is an 8". Can you stuff it on there, yes, but it deforms the tire somewhat. How much affect will that have on performance? Hard to say.

I dont know about ANY 275, but I do know Nittos run narrower than must other tires. I do know you'll be fine running a 275 NT555 DR on your stock 17x8 wheel.

Ditto on the Nittos. They do run smaller and do not buldge out too much on the stock rim. Run about 27psi cold in them so that the center does not wear out. I ran theses ones for a few years and beat the heck out of them at the strip and all was good!
A Mickey Thompson may fit but would not be ideal!
